Meat cuisine is a fundamental part of our identity, with a proposal that emphasizes select cuts, careful processing and grilling. Tradition and character coexist on the menu, with dishes that tell the story of the land and a passion for good food.
From the Carne Salada “La Rosa del Garda,” served raw or cooked according to tradition, to large grilled cuts such as ribs, T-bone steaks, and beef tenderloin, to more refined offerings such as picanha, Trentino-style liver, and slow-cooked meats, each dish is designed to enhance the quality of the raw material. Meats are cooked over an open flame and on lava stone to preserve their taste and juiciness, and accompanied by selected side dishes.
